Crustless Quiche

There isn't anything new or innovative about this recipe, but it turned out well, so thought I'd share.

2 cups reduced fat cottage cheese
2 cups part skim mozzerella
10 eggs
fresh spinach (I used about 4 handfuls)
mushrooms (5 large, diced)
green onion (3, sliced thin)
garlic
salt
pepper
italian season blend

Using a mixer or food processor, blend the cottage cheese. Add eggs and cheese, blend again.

saute the mushrooms, spinach and green onions until wilted. Add to cheese/egg mixture, blend and season to your tastes.

Add to a sprayed 9x13 pan, and cook until set in a 375 degree oven. Mine took a LONG time. About 1 hr 20 minutes.

Cut into 6 servings (this does not include measurements for the amount of salt you may add for taste)
