Corn Bread Muffins

I found this recipe and tried it out for the family and they said they were like the muffins at Cracker Barrel!!

Ingredients
1/2 cup all-purpose flour (I used whole wheat)
1/2 cup cornmeal
3 tablespoons sugar (I used brown sugar)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup (8 ounces) sour cream (I used reduced fat, next time I might try Greek or plain yogurt instead)
Directions
In a large bowl, combine the flour, cornmeal, sugar, baking soda and salt. In another bowl, beat egg and sour cream; stir into dry ingredients just until moistened.
Fill greased muffin cups two-thirds full. Bake at 400° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely. Yield: 8 muffins.
Nutrition Facts (from original recipe, not with my changes): 1 serving (1 each) equals 147 calories, 6 g fat (4 g saturated fat), 47 mg cholesterol, 249 mg sodium, 18 g carbohydrate, 1 g fiber, 3 g protein

Bump. I made these again last night and my family LOVES them. I made 24 mini muffins this time instead of larger muffins. My hubby said they taste like the corn muffins from Cracker Barrel.0

hmmm I couldn't imagine my cornbread without buttermilk. But I'm gonna take one for the team and try this recipe, looks like it's gotten great reviews so far.0
