Tofu ? I want to like it...

Anyone have any good recipes? I just learned I'm waaay overdoing the sodium ( lots of Sara lee turkey) I've been spraying a skillet, then on a burrito or lavash , I add turkey, onions, peppers, mushrooms( all grilled 1st) and a laughing cow wedge. Wondering if I could replace my deli meat w/ tofu ? Does it have lots of sodium? Def have to lose the Sara lee :(

    Some people hate the texture. I usually cube mine and bake it in the oven to make it crispy. It has a neutral flavor base so it tends to taste like other things, like marinades.

    try cubing and marinating the firm tofu in Bragg's Liquid Aminos for about 10-30 min., stirfry some veggies while you're waiting, then remove and set aside the veggies.

    Drain off the Bragg's (save it) and quickly sear the tofu in a very hot fry pan (not a non-stick)! with some oil. Remove, set aside. Deglaze the pan (still on high) with some of the remaining Bragg's or vinegar, then reduce heat, add back in the tofu, veggies and remaining Bragg's, toss and serve (rice or noodles optional).

    30 min. or less.

    I love tofu (even raw haha) so I don't know if this would help but I like to cook some onions/garlic in a bit of oil add the tofu, add fresh herbs (basil, oregano, sage), lemon juice and then veggies. In the last minute of cooking it I add a few tomatoes to add a bit of sweetness.

    Another I remember was getting dessert tofu (very soft, like a pudding texture), heating chocolate chips so they melt then mixing the chocolate and tofu together. Refrigerate for awhile until it's like a mousse. GREAT and simple dessert.

    You could also crumble it and add it to pasta sauces or chili.

    I hate to say this but....I've been a vegetarian for 19 years and I really have never liked tofu- except when its breaded and deep fried at Chinese restaurants. However, I LOVE tempeh- its more dense and has a sort of nutty flavor. Give tempeh a try!
  • Maybe try working your way towards cutting it out completely? I always make chicken fajitas by cooking chicken with tofu, By the end the tofu takes on the same flavor and look of the chicken. Then you can slowly make it more tofu than chicken!

    I just love raw tofu straight from the container with a ton of shoyu (soy sauce). Yummmerrrss! I've heard about baking it... don't know how crispy it actually gets, but I might try it that way sometime. Also marinade it in some teriyaki sauce and pan sear it... or maybe grill it? It might fall apart though, idk.

    If you buy Silken Tofu, you can use it in smoothies for creaminess, or you use them in healthy cookies, or even for a chocolate mousse. Lots of recipes online using tofu for sweet and savory things. :)

    mmm... tofu.
