carb cycling

So I am carb cycling to loose weight. For 3-4 days I have low carb (25% approx of my weight in grams of carbs - or 65ish) and then one refeed day wher I eat approx 125ish. My prob is that on low days I am getting bored... I need ideas for lower card vegi dishes... I tend to eat a lot of meat usually steak, and eggs. I try to keep to low fat protien sources (IE I try to only eat bacon once or twice a week) but I am looking for ideas for non meat meals that are lower carb... since I have about 60 carbs a day.... I can eat a variety of things...

spinach and ricotta quiche without the pastry? add a few extra veggies such as pumpkin, mushrooms and onion0

I'm a vegetarian doing low carb. So hard but I lost 6 pounds in like 5 days .I'm sure that was a fluke. Anyways I always make a huge salad with anything green I can find. Brocolli, snap peas, pepper and anything else I can find.I add eggs and avocado and tofu. These have a very low net calories. I also make stirfry with lots of cauliflower and kale and spinach with swiss chard.
making quiche is also a great way to add all the veggies in with protein from the eggs.
secret to make the veggies more interesting is spices spices spices. Experiment with different ones daily.0 -
I guess I need to research too to find out which vegis are lower in carbs... I know corn is high carb.... I use a LOT of spices... love the different hot peppers... serano/habenero/jalapeno... I buy them in bulk because I use them daily!!0

For vegetarian meat substitute, I find one of the best is portobello mushrooms. I use them in a bolognese sauce with creminis, white button, and even a few other wild mushrooms. The original recipe called to add pork, but quite frankly the mushrooms are sooooo good on their own, I've taken it out. Portobellos can also be grilled as a burger substitute.0

It isn't that I am looking for meat substitute... I LOVE meat and eat it all the time...
I am looking for low carb vegetable recipes... with or with out meat... to liven up my low carb days0
