I love my roasted veggies
I really do...
shot of non stick spray on a cookie sheet
add cut up sweet potatoes, fresh green beans, and carrots (can be on separate sheets)
another quick shot of spray then 425 degrees for 12-15 minutes.
When out of the oven, add a little mixture of fresh garlic, black pepper, and tad of salt to the green beans to the hot baking sheet then mix.
With the carrots add a touch of honey and balsamic vinegar to the sheet, then toss
I don't add anything to the sweet potatoes... though I have thrown all the roasted veggies into a pasta salad with a little italian salad dressing. That's so good too.
Anyone else love roasted veggies too?

I just roasted an artichoke, it was very good.
I always roast red bell peppers, asparagus, I have tried broccoli even.
