I have college kids home for the summer, looking for healthy dinner recipes. They are not overweight, but sick of the college food-Looking for fresh dinners every night!!!
A sit-down, healthy meal is their favorite part of the day.

hmmm...lately I have been making a lot of stir fry type dishes with tons of veggies and less meat than the recipe calls for. No one even notices it's gone with all of the veggies!0

Muffin pan lasagna was a big hit with mine. (search the forums or google for the recipe.) They also love grilled chicken or salmon. We had sloppy joes the other night made with lean ground turkey, on light whole wheat buns.
I'm looking forward to seeing what others suggest on here!0 -
You can't go wrong with some grilled meat and veggies done on the grill, i love to cook squash, zucchini, corn on the cob and asparagus on the grill, with chicken or pork of some kind.0

I always wanted anything with veggies real yummy homemade veggies...corn, green beans. Anything that wasn't slopped together. We also ate a lot of salads when I came home. I would say some comfort foods too like their favorite meals from childhood. I still make a lot of the meals my momma made when I was little that didn't help the weight issues, but make them healthier (ie no oil, extra butter etc).0

What are sloppy joes?
I did a pasta sauce with ground turkey, steamed broccoli & mushrooms, was gorgeous!
There's a rice dish I love too, dry fry spring onions, tofu or chicken, add peppers in strips, 2 big dollups of curry paste, mix in pre steamed rice, then when you get towards it all being coated with the curry paste, make a well in the middle of the pan, break in two eggs, scramble up, then mix into the rice - serve with crushed peanuts on top - GORGEOUS!!!!0 -
My son went nuts when we grilled big kabobs full of yummy veggies. He loved the big chunks of zuchini and the mushrooms. I've also been serving him salad with dinner almost everynight mixed with spinach greens. Recently I made a yummy spinach and egg tart. He loved it!

Since I have five kids I 1 1/2 the recipe. But I used two pre made pie crusts and put them on the bottom of a cookie sheet or Jelly roll pan.0 -
I love veggie pizzas on tortilla shells. Bake the tortilla @350 on each side first, top with some pizza sauce, cheese and whatever veggies (we normally do spinach, banana peppers, chopped tomatoes, and mushrooms) then a sprinke of asiago and or parmesean. It's smaller portioned and everyone can personalize their little pizza.0

Sloppy Joes are ground beef that is browned. Mixed with spices and a tomato sauce. It is served on a hamburger bun. They are messy to eat.... hence the name "sloppy".

Oh, forgot to add, throw back in the oven for about 5-7 mins or when cheese is melted or edges start looking too brown0

I love Kalyns Kitchen for health recipes.
Last night I had Zucchini pizza which was actually divine- I was kind of dreading it. I topped mine with cooked ham, peppers, mozzarella, parmesan and mushrooms.
Tonight I'm doing her almond breaded chicken nuggets. They taste so good , just like store bought breaded chicken and are so easy.
Another favourite of mine are homemade burgers with sweet potato fries and a salad.0 -
Look up some crock pot dishes.
I don't eat meat but I've seen people mention chicken and salsa in a crock pot.
I've been looking for a channa masala crock pot recipe that would be good.
Or if you google it there are crock pot burritos.
