Spaghetti Squash Casserole

Thought others might enjoy this, something I came up with a couple nights ago and it turned out amazing IMO. If you try it please let me know what you think.

Spaghetti Squash Casserole
SERVES 4
INGREDIENTS
4 cups cooked spaghetti squash
2 links Jennie-O lean Italian turkey sausage (hot or sweet)
1 cup Marinara
1 cup mushrooms, sliced
1/2 green bell pepper, diced
1 cup shredded 2% mozzarella cheese
1/2 cup red onion, diced
3 cloves garlic (adjust to taste)
1/4 cup parmesan cheese
Salt and pepper to taste
DIRECTIONS

Cook sausage, garlic and onions in a pan and drain any excess fat, if you used lean turkey sausage there probably will be little to none. Add the peppers and mushrooms and cook until almost soft, pour off any excess water. Add marinara and heat through then add spaghetti squash, stir to mix and then pour into a casserole dish. Top with mozzarella and parmesan and chopped oregano then bake in 350F oven for about 15 minutes until cheese is melted and casserole is bubbling.

Calories: 293 per serving
Carbohydrates: 21 grams
Fat: 15 grams
Protein: 22 grams

I would brown the onions, then the garlic first in a little bit of olive oil before adding the sausage to enhance the flavour.
I love squash but I haven't tried spaghetti squash yet. We shall see.0 -

Going to be yummy. I have fresh basil at home, would be a great topper
prior to melting that cheese
If you added a single serving size of 1% cottage cheese with the spaghetti
squash, it would add some cheesey creaminess to it too. I'm going to
give that a shot
