Anyone aware of any easy, yet yummy and healthy side salads?!
I've been searching recipes for ages and not many take my fancy!

I just made this one last night and it was yummy, I subbed oranges for the grapefruit (for some reason our store was out of grapefuit) it's filling enough to be a side salad or meal. I found it here - http://iowagirleats.com/recipes/?recipe_id=6005715
Black Bean, Quinoa, and Citrus Salad
Ingredients (serves 3-4)
1/2 cup dry quinoa
1 cup + 2 Tablespoons water
1/4 small red onion, minced
1 grapefruit, peeled & diced
1 can black beans, drained & rinsed
1/4 cup dried cranberries
2 ears of corn, kernels cut off cob
1 avocado, diced
1/3 cup cilantro, chopped
For the Lime Vinaigrette:
1 1/2 limes
3 T extra virgin olive oil
salt & pepper, to taste
Instructions
Rinse quinoa in a fine-mesh strainer. Add to a small saucepan with the water, then bring to a boil. Put a lid on the pan, turn the heat down to medium-low, then simmer for 15 minutes, or until the quinoa has absorbed all of the water. Remove from heat, let sit for 5 minutes, then remove the lid and fluff quinoa with a fork.
Combine red onion, grapefruit, black beans, cranberries, corn, avocado, cilantro and cooked quinoa into a large bowl. Toss with lime vinaigrette, sprinkle with additional salt & pepper to taste, then serve.
For Lime Vinaigrette:
juice 1 1/2 limes into a small bowl, then whisk in extra virgin olive oil and season with salt & pepper to taste.0 -
I have a cooked salad that I whipped up tonight as a side dish to my main meal.
It was really just throwing anything I could find into the pan but I've always been amazing with making the right choices, so here it is:
1 tomato, cut chunky, thin, cubed - however you enjoy it.
half a cup of Spring onions, sliced thinly.
1tps of grounded cumin seeds
1tps of garlic powder
half an onion chopped finely
half a grated carrot
1 tsp of vegetable oil
Serves 1.
Heat pan then place oil in. Put tomato in first as it can take a little longer to cook and put the spices on them. Mix in the rest of the vegetables and cook for 10 mins on med.
The best thing is you can also use them on crackers for a snack0 -
One of my absolute favorite salads in the summer is grilled asparagus, mixed greens and toasted pine nuts with a balsamic dressing. I personally like to shave parmesan on top. Yum!0

I am enjoying a side salad as I read this posts. I threw together fresh spinach, chopped carrots, craisins and almonds with a lite balsamic vinaigrette dressing. Yummy.0
