Asian Inspired Gluten Free Low Carb Summer Salad

This is absolutely delicious!!! Started throwing things together for a low-carb, protien-packed lunch, and this is what I came up with! It is absolutely delish and would make a great addition to a summer picnic table as a side dish or wonderful cold lunch!! Enjoy!

Asian-Inspired Quinoa and Veggie Tuna Salad

1 Cup Cooked Quinoa
6.4 oz pkg of Tuna
1 Cup Frozen Peas and Carrots - thawed
1 Cup Chopped Celery
2 Green onions - chopped
2 Cloves Garlic – finely chopped
1 Tbsp Extra Virgin Olive Oil
1 Tbsp Low Sodium Soy Sauce
1 Tbsp Toasted Sesame Seeds
2 Tbsp Grated Parmesan

Makes 4 Servings (about ¾ cup each)

180 Calories
16g Carbs
15g Protein
3g Fiber
6g Fat
2g Sugar


Instead of the peas and carrots, you could use 1 cup of shredded coleslaw mix for an even tastier crunchy fix!

    sounds yummy, remember to do gluten free soy sauce. Not sure if that comes low sodium or not. mwah!! I am making that gluten free bean cake for dessert saturday once again. :)

    Yum!! I love that bean cake...I am thinking about making it for Father's day dinner. I already agreed to do a salad, but I know that the sister bringing the dessert won't do anything gluten free for my mom who has to be gluten free and for me who is trying. I might make some as cupcakes and take a few to have

I"ll have to look up your bean cake:) I'm going to make a peach cobbler for Sunday with the GF bisquick. thanks again
