Kalamata Olive Hummus Recipe
This is a variation of a recipe I found on the web. I tweaked it to reduce the amount of fat in the original recipe. This is terrific on Wasa crispbreads, which are very low in calories. Quick and easy.
Kalamata Olive Hummus
Ingredients
2 cans chick peas
2-3 cloves garlic
2 tbls lemon juice
1 cup kalamata olives with pits (about 35 olives)
1 tbsp.cumin, ground
1 tsp red pepper flakes
1/8 cup olive oil
1/8 cup of water
Directions:
Remove pits from the olives.
Put garlic in food processor and process 15 secs.
Add chick chick peas and all other ingredients except olive oil and water.
Pulse and slowly add olive oil and water until hummus is smooth. Add additional water to attain desired consistency.
Makes about 3 cups hummus.
Number of Servings: 6 - ½ cup servings
173 calories per 1/2 cup serving
I usually only use half of a serving (86 calories) and spread it on a Wasa cracker (45 calories). it is very filling, and the Wasa crispbread adds a nice crunch for a snack.

O....M...G...it's like you read my mind. I can't get enough of kalamata olives lately. And no one else in my family likes olives so I would have it all to myself.

I wanna try this, how big are the cans you are using? The ones I have at home are 2.5 cups in one can - I think it's too much based on yield of 3 cups for the whole recipe.0
