fat-free blueberry cupcakes

NUTRITIONAL INFO: Cals 87, Fat 0.5, Protein 2, Fibre 1.5
Hi everyone,
Just thought I would share a tried and tested fat-free blueberry cupcake recipe with you. It is a simple recipe with cupboard ingredients and is designed to be fat-free only; you may want to adjust for lower calories etc. It is my own recipe (as I am a cake addict but can't eat cake because of gall stones atm) but it does work! Recipe is saved on the database as fat-free blueberry cupcakes.

INGREDIENTS:
50g caster sugar
40g soft brown sugar
1 egg (use only 1/2 of the yolk)
100g self-raising flour
25g oats
dash of skimmed milk (tblsp)
1 small gala apple
1 large banana
50 blueberries (10 for icing)
75g icing sugar
50g fat free greek yoghurt
METHOD:
Preheat oven to 180 degrees celcius.
Peel and dice small gala apple (removing core and seed) then place in a small saucepan with about a cm depth of water over a medium heat.
Once the apples are soft enough to mash, remove from heat and mash until saucy.
In a separate bowl, mash banana with both brown and white sugar.
Beat in the white and half yolk of a large egg.
Measure and sieve in your flour. Acd oats and beat.
Once cooled, add the apple sauce to the mixture and beat.
Add milk if mixture is very thick.
I then put my mixture with 15 blueberries into a blender and blended till smooth. I just did this to release some of the blueberry flavour and to ensure there were no other lumps. Leave rustic if desired.
Add next 25 blueberries into the mixture and spoon into 15 cupcake cases.
Bake for 20 minutes or until ur cakes resist prodding (i.e. u can touch the middle without leaving a dent).
Allow to cool.
Once cooled, decorate with blueberry icing. Mash the remaining 10 blueberries into your icing sugar and mix. The result should be a pink flecked liquid. I added a dash of lemon to mine to cut through the sweetness.
Smear over the top of your cakes (once cooled) and enjoy!
