Need my motivation back...

A bit of background.... In January of this year i decided i was going to eat well and exercise regularly. It was summer and the weather was great, i was really keen to lose weight.
I start around 10th Jan, and exercised 5 days a week for 8 weeks and lost 9kg (20 pounds). At the end of March my partner and I went on a 2 week holiday and it was great, and i splurged on good food, as you do when you go on holidays, and did no exercise.
Came back around the 8th April and have hardly exercised since, i've been eating **** food, and the weather is basically crap now (winter), so I'm finding it really hard to be bothered jumping on the elliptical trainer for even 20 minutes.
It may not be much but I have already put on 2.5kg(5.5 pounds), and I have a feeling that by the middle of or end of spring I will have put on the weight I had at the start of Jan.
So my question is, how do you still exercise in the winter months, and still eat good food. I am an absolute sucker for HOT food in cold weather and that's where the crap food comes from

I find taking lots of vitamin D (per your doctor) during dreary months helps with low energy/depression you know the winter blues. I personally take 5,000Iu's a day.
I make my own homemade soups, they are easy once you get the hang of it, I love soup!
Just boil a chicken, put in chopped garlic, sea salt, onion/veggies, and add brown rice or brown rice noodles if you like for chicken soup.
Tomato bisque is basically italian stewed tomatoes cut in cans, throw it in a pot with some half and half or some sort of cream (a little), mixed with a box of organic chicken broth.
The crockpot comes in handy. I throw in steak or steak pieces, tomato chunks in juice (from a can or organic in a can, etc, you can get the italian flavored ones too and then you don't have to spice it up), I throw in a can of organic kidney beans and veggies like green beans, corn, carrots, peas (frozen is fine or frozen, organic) or even fresh. And it cooks and wala you have minestrone-type soup.
Chili; I put in ranch seasoning (I have natural kind- they sell organic packets), different cans (pour in their water too) of kidney, pinto, etc. Add corn if you like, Add ground chicken or ground turkey for the meat. Add a jar of salsa (or healthy fresh salsa). You have a healthy "chili".0
