My diet is mostly plant based... However, I do consume dairy & I occasionally eat tuna or tilapia.
I made these Vegan Jamaican Veggie Patties for a party the other night & they were a huge hit!

you can use any veggies you want for this, or any kind of bread. it's good on naan, too, but naan has yogurt in it.0 -

i bake the chicken, cheese, marinara and basil until it looks melted and gooey and then i put it on the toasted italian bread.0 -

Check out Alicia Silverstone's book The Kind Diet for the uber healthy ideas. Chef Chloe Coscarelli also has a book with amazing food in it. They both give great info. Chef Chloe uses sugar (vegan sugar), Alicia doesn't. Alicia also has a website for The Kind Life.
I like vegweb.com and veganchef.com, too. There are some great blogs, too. I'm not much of a cook, but I have great recipes!0 -

Chick Pea Burgers
-canned chick peas (rinsed)
-1 egg
-green peppers or shredded carrots
-cumin
-garlic
-salt
-cilantro
-2 tbsp. flour (any kind)
process all ingredients and form into patties. i refrigerate them to help them firm up and then i pan fry or grill them.0 -
Newly vegetarian, mostly vegan, feel free to add me!! My best friend/roommate is also a vegetarian and it's wonderful to have a meatfree house!
Check out vegan recipes and if you want to modify things to vegetarian just add the dairy. Heads up though, cheeses that say they have enzymes are using Rennet. It's an animal byproduct to me since it's from the cow's stomach : /0 -

Hey there!! I'm fairly new to this site, but not to veg/vegan recipes. I've been a vegetarian/ sometimes vegan for about a year know and love what i'm doing to my body. What i would suggest is just going slow, like adding veggies to your everyday diet( fresh red peppers to sammies, spinach, avocados, hummus). i frequent the grocery store alll the time to buy fresh fruits and veggies to lay out in the open so when im feeling hungry i go for the apples and carrots and not other thing.
I feel like I'm blabbering on, so ill get right too it!!
My favvvvvvvee types of food are Mediteranian and Asian so alot of rice dishes. Basically i make a big pot of rice and saute a whollllellottt of veggies( anything you can find) on the side. little fresh ginger, chiles and soy sauce and your good to go!!
I also enjoy making felaffels and pita. that to me a good darn meal. maybe some olives on the side. I'm just super into fresh veggies anytime there around. they can spruce up any meal.

Try "Eat More, Weigh Less" (the book by Dr. Dean Ornish). Also Rodale Press has some good books, which include vegetarian recipes. I'm not a vegetarian but I'm starting to see there are more creative and delicious things I can try that happen to be vegetarian.0

Hi, I'm not vegetarian but I eat a lot of vegetarian food. Here's one of my fave's that you could make with a vegetarian cheese substitute, or I have made it without the cheese too. It's important to follow the steps because the texture makes this extra wonderful!
Roasted Quinoa with Potatoes
Adapted from How to Cook Everything Vegetarian
3/4 cup quinoa, uncooked
1 pound potatoes, cut into wedges
3 or 4 cloves of garlic, minced
1 onion, sliced
1 bell pepper, chopped (I used red bell pepper)
1 T crushed red pepper (I used Aleppo Pepper)
1/2 cup shredded cheese (I used Smoked Gouda)
salt and pepper to taste
1. Spread about 1 T olive oil in bottom of 3 qt baking dish. Preheat oven to 400 degrees.
2. Place the potatoes in medium pot and cover with water. Add a little salt. Bring to boil and add quinoa.
3. Boil for about 5 minutes, stirring occasionally.
4. Drain the water. Spread the quinoa and potatoes in baking dish. Add the onion and garlic. Sprinkle with salt and pepper. Drizzle with about 1 T olive oil. Stir to coat.
5. Place in 400 degree oven and roast for about 15 minutes.
6. Remove from oven and add the pepper. Roast for another 10 minutes until the potatoes are tender.
7. Add the crushed red pepper and season to taste. Sprinkle cheese over the top and return to oven until the cheese is melted, about 5 minutes.
This is better than Mac n Cheese for comfort food!0 -

Make sure to check out her cookbooks, especially Appetite For Reduction for MFP purposes (many of the recipes seem to be in the database, and the book helpfully lists nutritional info). The others are all great as well (Veganomicon and Vegan With A Vengeance are the standouts) but not necessarily so much with the low-calorie compared to "Appetite". Everything we've ever tried from her books has been amazing.0 -
A good hint if your going off protein is finding a good tofu or eating a whole lot more mushrooms lol. I've been vegetarian for 3 years now (As is no meat, this includes no fish). If your going to a low carb diet though, lots of tofu have high carb. If not try the already marinated tofu, they are a lot better lol. Lots of asian and mexican styles are great for vegetarians (italian is as well...but it's not as weight conscious), now for vegan...thats a whole different story lol. Vegans have an issue of having to much soy in their diet, if your drinking soy milk, eating soy food products thats no good, maybe try almond or rice milk? A good thing to do is eat a lot of greens, potatoes and carrots and pumpkin, corn all the bright vegetables are normally higher in starch. Anyway good luck on the vege side0

Hi, i have been a vegetarian all my life and let me bust the myth that vegetarians dont get protein in their diet, and the only way to get proteins is tofu and soybean. The other class of foods which provide all essential and non-essential amino-acids for vegetarians are the different kinds of lentils, beans and legumes. When I say different kinds - there must be 10-20 different varieties that you will never see in your nearby supermarket. Go to the nearby indian store to find lentils of different varieties - arhar, moong (yellow or green), yellow split peas, masoor, black gram, urad (black or green), all kinds of kidney beans and the list goes on. You can always make soups for all the following or find recipes on the net. Or go to your nearest Indian friend.0

i like ohsheglows.com! she has a great background story and lots of great recipes. as well as an awesome bengal cat.
for a little treat, i like eatmedelicious.com - not always the healthiest but there are healthy recipes on there.
i have a few vegan books - i recommend vegan brunch and vegan in 30 minutes. i heard appetite for reduction is a great book as well.
and the internet is always a great resource! there are many vegetarian/veganized recipes out there.

Seitan is the quintessential vegan/vegetarian protein source. There is nothing else meatless that can compare nutritionally to it, I believe.
You can also try tempeh if you're into that sort of thing. (I am not into that sort of thing.)
Also, if you choose to be vegetarian rather than all out vegan, you can get ample protein from greek yogurt, cheese, eggs, and egg whites.0 -

It'll help you find amazing recipes and gives you peaks into various recipe blogs so that you can find your favorites :happy:0

Protein is found in most plants. If you eat a variety of vegetables and fruits, you will get plenty of protein without having to think about it.0
