Warm Cheesy Melty Crunchy Wrap
Have to share this little gem! Only 400 calories and TOTALLY feels like a cheat!
Ingredients:
Alvarado St. Bakery Sprouted Wheat Tortilla (found at Trader Joe's) - 150 cals
2Tbl Tostitos Salsa con Queso - 40 cals
4oz extra lean ground turkey - 120 cals
45g spinach (optional) - 10 cals
41g avocado - 66 cals
1oz plain non-fat Greek yogurt - 17 cals
* Brown your ground turkey in a pan and use whatever seasonings you like.
(I used low sodium taco seasoning and tossed in a huge pile of spinach to let it wilt in there right at the end of the cooking)
* Warm your tortilla (on high heat) each side in a dry clean skillet
* Load your tortilla with the meat, cheese, avocado and Greek
(I've made without the avocado and greek and it's still good! Be creative! Any lean meat will be good! Add your favorite veggies ....onions, colored peppers, etc.
* Fold it all up into a burrito and put it back in the skillet. Let it sit on each side for a minute to get it crunchy!
* Enjoy!
NOTES:
The sprouted wheat tortillas are healthier and taste WAY better than regular whole wheat tortillas or the nasty low carb ones! AND they get crunchy like a white tortilla would! Use these for wraps, quesadillas, etc. The KEY is toasting them in the pan and you wont miss the white flour!
Tostitos Queso does have quite a bit of sodium. However, I've tried lower sodium ones (like the one from TJ's) and IMO, the flavor of the Tostitos cheese really makes the difference!
Edit to add: The wrap picture doesn't have the avocado or greek in it. This is a pic of the first one I made.
