Easy packed lunch ideas!

Hey guys :)

I was hoping you could help me! I need some new ideas for a packed lunch to take with me to work. I've kind of got into a rut having instant *just add water* snack pots and microwave rice. :(

I'm looking for low carb recipes that are relatively cheap and can be made the day before or in the morning. I love, love veggies and pulses so anything with these would be great.

    I bring a salad with me, there are SOO many different ways to dress a salad. Quick and easy lunch!

    I also used to bring lots of veggies and eat them with Ranch dip.

    Egg salad made with hardboiled eggs, minced onion, minced garlic, black pepper and plain, non-fat 0% Greek yogurt. I top it up with a slice of Swiss cheese and eat it on Wasa hearty crispbread or multi-grain sandwich thins.

    Try salad with salsa!! Saves calories from dressing and tastes GREAT!!! also, i buy the "mexican food" dishes, frozen, and put them on top of lettuce. Ssanta fe rice and beans from lean cuisine comes to mind. Topped with salsa. Low cal tostada salad. Mmmmmm mmmmm mmmmmm

    Do you have a Morrisons nearby? I just tried the Morrisons brand Vegetable Sushi Selection in the grab&go section. It was surprisingly fantastic and priced between £1-2, depending on which one you get. It may be a little expensive to buy every day of the week, but every once and a while, I'd definitely recommended it.

    Salads.... I grill on the weekend meats and fruit (pineapple - pears-plums etc) slice up the meat and sort into containers, same with fruit. In the morning I load a handful of mixed baby greens, top with meat (and fruit sometimes) no need for dressiing...throw in a yogurt and some of the fruit and sometimes some crunchy carbs.. My coworkers are jealous. and so tasty too!

    Hot ham and cheese (not low carb but delicious) -slender rounds 100 cal bun, hormel naturals meats and an once of cheese (pepper jack for me), in the microwave for 30 sec-1min.

    My Favorite Salad -one romaine lettuce leaf and a handful of spinach torn up, 1/4 of a red pepper diced, 1 Tbs of red onion diced, 2 small mushrooms sliced, 1 plum tomato quartered, 1 green onion sliced, 1 Tbs of shredded romano cheese. It's so flavorfull you don't need dressing but sometimes I add 1 TBs of light 3 cheese ranch. For protein I add 2 hardboiled eggs or leftover chicken

    Lunch in a pinch- 2 cups baby spinach with 1-2 Tbs of light raspberry vinaigrette. 1/2 of a bell pepper, 2 hardboiled eggs and a piece of fruit.

    Whatever I had for supper the night before, always make enough for your lunch the next day.

    The birds eye and green giant steamfresh veggies arent bad. Hardboiled eggs, yogurt, fruit, frozen left overs

    I tend to make an extra batch of dinner and have it for lunch the next day or day after so its not quiet 'same old'

    A quick and easy one is a tin of cannolini beans, drained and mixed with a tin of tuna (drained) a sprinkle of dried oregano and season with salt and pepper, mix together, pile on a handful of salad leaves ... quick and easy cold bean salad :O)

    Yesterday Lunch: 3 mini bell peppers, half a can of kidney beans and 1 TBSP of cream cheese. Mash up the beans and cheese and put into the bell peppers.. got instant stuffed peppers... also add any spices .. i was just a bit lazy.

    Favorite Lunch: Rice Cakes w/ half a can of tuna and half an avocado w/ some lemon juice (salt & pepper) mash up the tuna and avocado and put on rice cracker... really yummy

    Currently i'm hoping to maybe make a soup or something big batch so i have have it for this week.

  • I usually make a few different dishes on Sunday that I can eat throughout the week. One of my favorites is egg white/cottage cheese spinach & feta quiche. Made in a regular pie plate, 1/4 pie slice comes to just over 150 calories. I usually eat that with a side salad of tomatoes/red onions with lemon juice or a low cal dressing.

    Another dish I came up with is a low calorie shepard's pie. Brown some low calorie ground beef with onions, flavor w/ worcestershire, salt and pepper. Add some frozen peas/carrots toward the end so they thaw, but don't over cook. Then make "faux" mashed potatoes with cauliflower. I usually use at least one potato, or a ratio of 1:4 potato to cauliflower. The key to this dish is portion control, so I take a bunch of little tupperwares and layer the beef/pea/carrot mixture on the bottom, then add the faux potatoes on top. Then during the week, just grab one and nuke it at work. Each one comes to under 300 calories.

    There's something about a warm lunch that's more satisfying/filling, but maybe that's just me.
