    Hungry, Hungry Artichoke Hummus

    Ingredients:
    One 15-ounce can chickpeas (garbanzo beans), drained
    1 cup canned artichoke hearts, drained
    1/4 cup fat-free vegetable broth
    1/4 cup plain fat-free Greek yogurt
    1 tablespoon lemon juice
    1 1/2 tsp crushed garlic
    1/2 tsp dried parsley flakes
    1/2 tsp salt
    1/4 tsp black pepper
    1/4 tsp ground cumin
    1/4 tsp paprika
    Optional garnish: additional parsley flakes and paprika

    Directions: Place all ingredients except for chickpeas in a blender.

    Using a potato masher or a fork, thoroughly mash chickpeas. Transfer to the blender, Puree until smooth, stopping and stirring if blending slows.

    For best flavor, refrigerate hummus for serveral hours. Before serving , garnish with a sprinkle of each paprika and parsley flakes, if you like.

    What do you eat with your hummus? I normally eat saltines (I LOVE saltines) but they are not good for the diet....any suggestions? Thanks!

    fresh veggies, pita chips, pretzels, wheat thins, tortilla chips, pita bread or on a sandwich.

    ok so i made this recipe ... and to me it's not as good as it sounds. I have a spicy hummus recipe with jalapeno's that I like much better. I LOVE the spicy SPICY things and this just isn't spicy enough for me :grumble:

    Jalapeno Hummus

    1 cup garbanzo beans

    1/3 cup canned jalapeno pepper slices, juice reserved
    3 tablespoon tahini (*I use peanut butter*)
    3 cloves garlic, minced (*I leave this out, I think it adds way too much garlic taste*)
    2 tablespoons lemon juice
    1/2 teaspoon ground cumin
    1/2 teaspoon curry powder
    crushed red pepper to taste

    In a blender or food processor, mix all the ingredients. Blend until smooth
