Vegetarian diet, trying to eat 1200+ calories

                    I despise pasta and rice and a lot of breads. they are too heavy for me. I enjoy a lot of vegetables and fruit but I seem to only get around 900 calories a day. I already eat peanut butter, tofu, and black bean daily. I am a vegetarian and try to eat only natural sugars and no frozen or processed foods. What can I eat that is high in calories and fits into my diet?

            Fresh fruit smoothies, almond milk latte's, rice/beans, almonds0

            Tempeh is great in stir fry or sandwiches. Also there are vegan Soy or whey protein powders that can add some cals.0

Edemame.
Cottage cheese

            I do not want to take protein shakes as I do not need more protein. I should have added that I stay away from cheese and soy as much as possible. I also already eat a lot of greek yogurt! I have never tried quinoa as it is pretty expensive and I just assumed I would dislike it as I do rice. Maybe I will try that though.0

How much protein are you getting daily?I do not want to take protein shakes as I do not need more protein. I should have added that I stay away from cheese and soy as much as possible. Have you tried basmati rice - really tasty?

            I'm vegetarian feel free to add me if you want to stalk my diary. I eat eggs and I think they are the highest calorie food I have on there. Not sure if you do eggs. My suggestion is more nuts those buggers add up fast!0

            Protein powder and nuts. Nuts pump up the calories quicklike!0

Tofu isn't processed, other than that is has to be made, but it is soy. However, things like tofu burgers and the like are.0 -

            I know its filled with carbs, but a baked potato can add calories. I add broccoli, cheese, and sour cream on top, but I've seen other baked potato toppings ideas online such as salsa and things, so maybe look into that0
