Worried If I'm doing something wrong? Diet + Exercise plan

Hello, I was wondering if I could get some advice on a diet+exercise plan I've set up for myself. As you can probably see from my stats, I'm not at a healthy weight for my height...which is primarily due to the sedentary lifestyle I had during the school year with few hours of sleep and very little to almost no exercise (curse you, IB classes). Now as it's summer and I have much more free time,I really want to lose all the extra pounds (I think almost 15) that I have gained since the beginning of the school year.
As of right now I'm about 5'5 in height and 157 pounds (17 year old male).
So starting with my diet plan, is it spot on to create a significant calorie deficit? I'm afraid I'm not eating enough calories which from what I've read on this website can actually prevent me from losing weight.
Breakfast
-Whole grain cereal with 2% fat milk
OR
-1 Whole Egg with a slice of toast
Lunch
-1 Chapathi (a type of flatbread made of flour)
-1 cup of Sambhar (lentil soup that has vegetables and spices)
-mixed vegetables (boiled with spices)
Snack
-fruits, usually an apple and some grapes
-1 cup of cranberry juice
Dinner
-1 Chapathi
-Brown Rice
-1 cup of sambhar
-mixed vegetables (boiled with spices)
LOTS of water throughout the day
Luckily, I'm a vegetarian, so the abundance of vegetables and fruits in my diet plan is not a problem for me to adjust to. However, am I not eating enough calories? I'm trying to limit as much rice as possible because of the high fat content, but if I'm eating too less I can totally factor more into my lunch...or do something completely different?
Exercising wise, I usually run 2 miles (about 300-320 calories) every day 6 out of 7 days a week, which is about a half hour of cardio every day. I alternate running/walking as well while I'm exercising to boost my metabolism even further.
So what do you guys think of my diet+exercise plan? Are there any MAJOR issues with either plan? I'm about a week and a half into this change and so far haven't lost any weight (in fact, I think I gained 1 or 2 pounds) but I'm not very worried yet because I've learned to not put as much faith in the scales (could be gaining muscle, but just a guess).

Have you entered your stats/goals into MFP? That should be your guideline on your calorie requirements. Make sure you are getting your protein - the eggs and lentils are good, but is it enough?; be sure to eat your activity calories. Good luck in meeting your goals!0
