DELICIOUS pumpkin dessert! OR breakfast!!

Mix 1/4 cup pumpkin (canned), 2 T. ground flax seed, 1/4 c. eggbeaters, 2 pkts stevia, cinnamon to taste.
Pour into dish/mug sprayed with oil.
Microwave about 2 minutes (adjust for your microwave)
Cool (if you can wait that long)
Top with 1 small container of Activia Vanilla Yogurt (Light)
soooooooooo GOOD!!! And very filling too! I think I will be making this for breakfast!!

Bob's Red Mill - Whole Ground Flax Seed Meal, 2 tbsp 60 4 5 3 4 0
Aaryn's Pumpkin - Pumpkin- Roasted Plain, 1/4 cup 25 6 0 1 2 1
Eggbeaters - Egg Beaters, 1/4 cup 30 1 0 6 0 0

    Not sure you can all read the stats on this........but it is only 185 calories total and sooooooo big and filling. I wonder if anyone has any ideas on what else I can do to change this up? I really think this is going to be my go to breakfast for ahwile, but would like to increase the calories a bit without increasing the size. Thanks!

    I make this for dessert all the time. I only use pumpkin and egg beaters though. You can sweeten it with splenda/stevia and add cinnamon to taste.

    What I am really loving about this is that this is all healthy stuff! None of the cake mix or funky chemical laden crap.......just pure food......and tastes soooooooooo good! I had it again for breakfast this morning and added a few sliced almonds to it to increase the calories. pure yum:love:
