    Do you think it's okay to peel the skins off and bake them or does it completely ruin them?

    Well, I think the skins probably helped keep it all together... You can try it! They were a little crispy, But I liked that!!

    Looks really good. I'd also consider brushing them with butter for a richer flavor.

    I also fry disc of sweet potato in coconut oil....very tasty!
