What would go good with....

I'm going to make a balsamic chicken with mushrooms on saturday. I usually lay it over a bed of rice. I can't decide what type of veggie to do on the side.
I was thinking either broccoli or asparagus but I want a different way to cook it than just boil/steam it.
To add, I don't own a grill.
So what kind of veggie should I do and how should I cook it?

Zucchini and tomato with either Italian herbs or herbs de Provence maybe?0

I roasted veggies, so my suggestion would be oven roasted zucchini, eggplant or carrots. Or how about green beans, I boil them to a tender crisp and add olive oil and garlic before serving *yummy*0

YES! I just started doing this about a year ago and mad I didn't discover it before, just fresh broccoli florets with some olive oil, Mrs. Dash and a touch of kosher salt, and put in a 400 degree oven for about 12 minutes. Completely changes the flavor and gets the florets all crispy. Love!
Also if you have the calories available try parmesan cheese on it and bake, so good!0 -
I'd saute some tomatoes and scallions with a little basil in a tablespoon of ghee. You could throw some squash in there too.0

i cut up veggies all kinds tomato(cherry whole) zuccinni, summer squash whole musrooms peppers whatever you like onion then spray them wit EVOO or ICBINB spray pepper and some salt pop them in the oven @400 for 10 to 15 minutes They are roasted perfectly0
