Lots of Flour

I have a lot of all purpose flour on hand (buy one get one sale plus coupons) that I got stupid cheap and need some good bread, cookie, cake, muffins or dinner recipes. Anything sweet I make will be given to family and neighbors. I just need to use up some of this flour. It is taking up too much cabinet space.

    bump..Someone HAS to have atleast one favorite recipe that uses flour.

    Shortbread - uses up a LOT of flour.

    4 sticks of softened butter. 1 cup sugar. Mix til light and fluffy - slowly add around 3 3/4 cups flour.
    Flour the table and flatten the dough ( you may need to add more flour).
    Bake at around 350 deg until golden on top.

    GLAZED LEMON POPPY SEED MUFFINS
    (12 muffins)

    Ingredients:
    1/2 cup calorie reduced buttery spread (like Becel 63% less calories)
    2/3 cup sweetener of choice
    2 eggs, separated and room temperature
    1 1/3 cups all purpose flour
    1/4 teaspoon salt
    1/2 teaspoon baking soda
    1 teaspoon baking powder
    2 tablespoons poppy seeds
    zest of 2 lemons (yellow part only)
    1/2 cup fat free, plain Greek yogurt
    juice of 1 lemon (2 tablespoons)
    1/4 teaspoon pure lemon extract
    1 teaspoon pure vanilla extract
    nonstick spray
    Method:
    Preheat oven to 350 degrees F and spray a muffin tin with nonstick spray.
    In the large bowl of an electric mixer (or a large bowl using a hand held mixer), cream butter and sweetener until light and fluffy. Add the 2 egg yolks one at a time.
    In another bowl, whisk together flour, salt, baking soda, baking powder, poppy seeds, and lemon zest.
    Turn the mixer to low and add the dry ingredients, alternating twice with yogurt. Then add the lemon juice, lemon extract, and vanilla extract. Mix until just combined; batter will be thick. Do not over mix.
    In a small bowl, beat egg whites until soft peaks form. Fold into batter gently until smooth.
    Spoon batter into muffin tins about 3/4 full. Bake in the center of your oven for 20 min, or until a toothpick inserted into the middle comes out clean.
    Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
    Drizzle with glaze if desired (recipe follows).
    Vanilla-Lemon Glaze
    Ingredients:
    4 tablespoons icing sugar
    1/2-1 teaspoon almond milk
    couple drops each of vanilla and lemon extract
    Method:
    Mix all ingredients together in a small cup or bowl. Drizzle onto cooled muffins with a fork.

    BANANA CHOCOLATE CHIP MUFFINS
    (Makes 12 muffins)

    Ingredients:
    3 medium, ripe bananas
    1 egg white
    1/4 cup reduced calorie margarine, melted
    1.5 teaspoons vanilla extract
    1/8 teaspoon salt
    1/2 teaspoon cinnamon
    2/3 cup sweetener of choice
    1 teaspoon baking soda
    1 teaspoon baking powder
    2/3 cup flour
    1/2 cup quick oats
    1/4 cup chocolate chips
    Method:
    Preheat oven to 350 degrees F. Spray a muffin tin, or line with 12 liners.
    In a medium bowl, mash ripe bananas. Add egg white, melted margarine, vanilla, salt, cinnamon, and sweetener; stir well. Add flour, oats, baking soda, and baking powder; stir until just combined. Fold chocolate chips into batter.
    Spoon batter into muffin tin (should make 12) and bake 15-20 min.

    I will definitely be making the shortbread cookies and muffins. I think I will take them to church Sunday for everyone to enjoy with their coffee before service.

    I don't have my recipes handy but homemade bread takes a TON of flour. A good 3 loaf recipe takes about 12-15 cups. It is so tasty, but I don't make it anymore because I can't stop eating it LOL There are some great basic recipes on the internet.
