Gluten Free -- Flour

If a recipe calls for gluten free flour does it matter what kind of flour? I am making this recipe -- http://allrecipes.com/recipe/gluten-free-cinnamon-rolls/ for someone new to the gluten free diet! I know its not healthy, but thats what they wanted.

    Different gluten-free flours have different tastes. For cinnamon rolls, I would avoid anything with too strong a taste, like garbanzo bean flour. Rice flour would probably be good. Bob's Red Mill has a great selection of gf flours, including an all-purpose baking mix.

    There are many types of gluten free flour so kinda strange this recipe didn't indicate a mixture to choose from? If you want a good basic blend I reccomend Bob's Red Mill All Purpose GF Flour. Contains garbanzo flour, potato starch, tapioca flour, sorghum flour, and fava flour. With baking one type of GF flour doesn't usually work well so a blend of different flours is important. There is also a brand called Better Batter- they made a GF flour mix, also brownie mix that tastes amazing. They are worth checking out for sure and sell their all purpose flour in bulk online. www.betterbatter.org :)

    Not to sure. I use bobs red mill all purpose gluten free flour as a one to one replacement. You might be good with outer kinds, if you have a particular kind google it and see if there is any quirks with it.

    Mixing a couple types of gf flours is a good idea. I usually mix a few types together equally. Over Easter I made some gf vegan pies, and I tried almond flour for the first time. It was very good, and I think it is a good addition to desserts and baked goods as it doesn't have a strong taste and has a nice flavor. I got mine at Trader Joes, a great place to shop gf if you have one near you.
