community potluck: what to bring?
tonight the community garden is having a potluck. I am not sure what to make, so I thought some of you might be able to give ideas with what I have.
at our potlucks, we try to make dishes that primarily consist of something grown at the garden (at least that's how i look at it... ) and vegetarian.
I have on hand:
snap & sugar peas
garlic & garlic scapes
red onion
swiss chard
beets
kale
radishes
carrots
green onion
cilantro
rosemary
quinoa
couscous
of course, i have all the spices and seasonings. the only thing i can think of making is my ginger/soy snap pea salad, but i've brought that many other times. i'd like to make something with the beets because i have a lot of them, but i really don't know what!

How about a cold coucous sald with red onion and sugar snap peas? That sounds yummy!!0

I realize it's a bit too late for this, but you could always do a vegetable roast next time. I like bringing veggie roasts to group events, because it's a nice hearty dish.
The red onion, beets, and carrots would all be lovely roasted, and you could always supplement with some potatoes/sweet potatoes/squash/eggplant/yams/tomatoes/anything that stands up well to heat really/etc. A bit of olive oil, some balsamic vinegar and maybe a little salt, and you're set!0 -
Or roasted vegetable couscous, even!0

i wonder if there's a way to shape most of that together into some kind of veggie patty? the quinoawill definitely help it stick but you might need to use some eggs.0

I do love this.. we often have this in the fall when the nights are cool enough to turn the oven on. I ended up making the ginger soy garlic snap peas, but then didn't go to the potluck because of a thunder & lightning storm and so now I'm stuck with the pea salad that I didn't really want. hahah! it's good, I just wasn't in the mood for it.
I'll end up having it for lunch tomorrow, probably. I'm kind of sick of peas right now, you know? still a ton on the vines and we've picked *so* many. i may have to blanch and freeze some.0
