Quinoa Salad

This recipe is delicious! Thought I would share with everyone! Enjoy!
1 cup quinoa, cooked
1/2 cup dried cranberries
1 red pepper, diced
1/2 cucumber, diced
1/2 med onion
1/2 cup sliced almonds
juice of 1 lemon and its zest
1 tbls of olive oil
salt and pepper to taste
You can add in any other herbs of your choice (parsley, thyme, etc). I used fresh basil this time!
Makes 6 cups, 1 cup serving:
Calories 196
carbs 25
fat 15
protein 6
fiber 4
You could also have 1/2 cup as your serving, but you may be tempted to have more....! hehe!

Wow. Made this and it fit into a 6 Cup container. After my hubby and I each had a cup, I realized that there isn't too much left!! LOL I edited the recipe aobve. You can always take out the olive oil, but I find that it's not much and it's a good fat.0
