Soup

Okay so there are days when I have very little time to eat while at work and rushing around in the morning
causes me to forget a healthier lunch. What do you eat in terms of canned soups? or any other alternatives?
I find that most soups have a TON of salt and I dont want to overload my body but like today, I'm not feeling
well and I think soup is the only thing that will stay down.
What soups are better? Brand? type?

Recipe for homemade tomato and carrot soup.
Bag of tomatos skinned and chopped or 4 tins of chopped or plum.
Bag of carrots peeled and chopped.
Couple of large onions
Few slices of lean bacon (optional)
Fry bacon and onion, add carrots and tomatos. Just cover with water and bring to the boil. Simmer until carrots are soft.
Blitz and season to taste. I sometime add a couple of veggie stock cubes for extra taste.
Makes a big pot that keeps well in the fridge for a few days and low on calories too.
Hope this helps.0 -
Amy's Kitchen makes some damn good canned soups. They are pricier but worth it, and your money is supporting a good independent company. I watch my sodium but the lower sodium soups usually aren't very good, so on days I have soup I'm just extra diligent with sodium for the remainder of the day.
My favorites of Amy's are the "organic hearty" line -- French Country, Rustic Italian, and Spanish Rice & Red Bean.

I don't eat canned soup that much but I do make soups in my crockpot and freeze into individual portions. My favorite is chicken tortilla.
2 big cans of tomatos ( I can tomatoes in the summer and freeze them but you can use store bought)
1/2 bag of frozen corn
2 cans black beans rinsed
1 small can diced green chilis
Chicken (you can used canned, the frozen fajita strips, or boil your own)
cumin, salt, pepper, garlic powder, and onion powder to taste
Put all ingredients in crockpot and cook on low for 7-8 hours.0 -
