Delicious Tomato Recipe!

Tomatoes are everywhere right now and are super cheap! I have been making them this way for the past few days and have loved it! It is super delicious and would also make an excellent appetizer!

Ingredients:
1 beefsteak tomato
olive oil spray
2 tbs of FF or RF parmesan cheese
1 tsp italian seasoning
1 tsp basil seasoning
1/2 tsp garlic powder
dash of salt
dash of pepper

Pre-heat oven to 400
Slice tomato into thin slices
spray cookie sheet with olive oil spray and place tomato slices on cookie sheet
mix parmesan cheese with seasonings in bowl
evenly distribute parmesan cheese mixture on tomato slices
spray tomatoes with olive oil spray
bake in oven for about 8 minutes
then, to get the cheese brown and kinda crispy, broil for about 3 minutes


It is super good!! I eat the whole tomato...and because it is so low in calories...you can and not feel guilty!!!

    I do something similar to that only I use either green or almost ripe tomatoes (depending on mood and what I have) and mix panko bread crumbs, low fat grated parmesan cheese, any mix of seasonings depending on taste of the evening (asian, french, italian, creole (use some crab boil seasoning! OMG!) lightly spray a cookie sheet with pam, place tomatoe slices in an even layer, and then top each with crumb and cheese mixture and bake til golden. Bam, instant "fried" green tomatoes.
