45 calorie Pineapple Mini Muffins!

I just made this recipe tonight, and it makes 42 mini muffins. I think they'd be great for breakfast because they have a bunch of fruit and are made with whole wheat. You could totally add raisins, nuts, spices, or replace the pineapple with peaches. It's really versatile and pretty healthy for a baked good. Pictures and recipe included on the website. Enjoy!

    Hello from Chicago! Here's the recipe from from http://bestbakednoms.blogspot.com/2012/

    PINEAPPLE MINI MUFFINS (adapted from The Joy of Vegan Baking)
    makes about 42 minis

    2 cups whole wheat flour
    1 1/2 tsp baking powder
    1/2 tsp salt
    1 banana mashed
    1 tbsp orange juice
    zest of half a lemon
    1/2 cup sugar
    1 tsp vanilla extract
    1 tbsp Stevia powder
    20 oz can crushed pineapple (in 100% juice-NO SYRUP!)
    1/2 cup unsweetened applesauce

    Preheat the oven to 350 degrees and prepare (spray with PAM) a mini muffin tin, or normal sized muffin tin. I like them mini!

    Mix together flour, salt, and baking powder in a small bowl. Set aside.

    In a larger bowl mash the banana with the zest and orange juice, then add in the vanilla, sugar, and Stevia.

    Pour the entire can of pineapple into the banana/sugar mixture and mix together.

    In increments add the dry ingredients and the applesauce, switching off between them and mixing. The batter will be lumpy, don't worry.

    Bake for 15 minutes, or until a toothpick is inserted and comes out clean.
