I made my first omelet tonight

Since dinner should be the smallest meal of the day, I thought an omelet would do the trick, I never made one so I looked it up on you tube (you can find anything on there) my son learned to shave by watching you tube, that was one of the few things I couldn't teach him.

Anyways the great thing about omelets, low calories and I could make one every night of the week and they never have to be the same, tonight I added homemade salsa and cheddar. 180 calories. It is also a great way for me to get some vegetable servings in, I like vegetables just not much of a cook and they never taste as good and flavorful when I cook vegetables, I don't blame my kids for not wanting to eat them when I cook them :)

tomorrow night w/spinach and walnuts.

I still have 160 calories left for the day, which I am fine with since I didn't get much physical activity in today besides the normal running around doing errands, grocery shopping and laundry.

    I LOVE Omelets!

    I don't even add cheese to mine most of the time anymore... diced peppers, onions, mushrooms, olives, spinach... yummmmmmmmm
