Coffee Cake (low carb, grain free!)

Delish! I thought I would share.. cannot remember the site that I found this on, sorry! :ohwell:

Cake:
2-1/2c Almond Flour
1/4 tsp Sea Salt
1/2 tsp Baking Soda
1/2 cup Chopped pecans (or walnuts.. I just had pecans)
1/4 cup Grassfed butter (or grapeseed oil.. I didn't have that though)
1/4 cup Honey
2 large Eggs

Topping:
1/2 cup Almond Flour
1 Tbsp Cinnamon
2 Tbsp Grapeseed oil (I used veg since I didnt have the grapeseed)
1/2 chopped Pecans (or walnuts)

Preheat oven to 350
Grease 8" square baking dish
Cake:
Combine dry ingredients for cake in large bowl. Whisk together the wet ingredients and then combine the two throughly. Spread batter into the baking dish (It is thick, I used a spatchula to make it even)

Topping:
Combine flour and cinnamon together, add in the wet ingredients and mix well. Add in pecans and then sprinkle on top of the batter.

Bake 25-30 minutes or until toothpick comes out clean

    I did the first time... then I ordered from Honeyville direct and it was WAY cheaper. I got 5lb bags

    No I brought it into work... but the leftovers will come home for dessert tonight lol

    I figured in 9 servings and it figured out to be :

    405 cal
    33 fat
    5 sat fat
    24 carbs
    10 protein
