Brown rice, Black Bean, Avocado Salad

AKA homemade chipotle bowl!
-Kroger Boil-in-bag brown rice, 1 cup cooked (150 cal)
-Black beans [canned], 1/2 cup drained (110 cal)
-Avocado, 1/2 cup cubed (120 cal)
-Part-Skim Shredded mozzarella, 1/4 cup (80 cal)
-Pico de gallo, 4 TBS (10 cal)
-Garlic salt, to taste
-Hot sauce, to taste
TOTAL CAL: 470
Note:: My mom also added some grilled chicken.
Steam rice in microwave. When finished, let cool very slightly (as to not burn yourself) then place 1 cup of the still hot rice into a bowl and top with the cheese so the cheese melts slightly (throw back into the microwave for 15-20 seconds if you'd like the cheese to melt more).
Now throw in the rest of the ingredients, mix together and enjoy :drinker:

@lil_pulp I ate it right after steaming the rice in the microwave and put the cheese on top of the rice right away so it got a little metly. Then I threw on the rest of the ingredients cold and ate it. The rice and melty cheese were the only warm part for me!0

@BebeRenee I love Chipotle too and this actually tasted better to me!! Something about the fresh ingredients made it a lot more satisfying and tastier in my opinion0

Also, I should note that this is very filling on top of being yummy! I was planning on having this "burrito bowl" with a Gardenburger frozen black bean patty on the side and was full enough to skip the black bean burger.
If you are looking to make it more filling for yourself, adding the grilled chicken will help. Fruit on the side or a black bean patty would be good ideas too!0 -
