Filler

What do you use as your filler item when making meatloaf or meatballs? I usually will use panko bread crumbs or oatmeal or saltine crackers. Any other ideas that's not so calorie laden?

    Filler Ideas: These help bulk up the loaf and stretch your meat, also used to help bind the wet ingredients with the ground meat. You could use cracker crumbs, bread crumbs (seasoned or plain), quick cooking oats, corn flakes, mushrooms, garlic or seasoned croutons, Stove Top Stuffing and even rice or chopped/grated veggies like carrots.

    I've often wondered why we use filler, and I can't think of a reason - except that my mother always did! Eggs help hold it together. I have used a slice of slightly old bread soaked in a bit of milk and it comes out very good and tender but I don't do it as filler.

    lol....I don't know either except that we always added some kind of a wet ingredient in the loaf like tomato sauce or something and the filler helps to bind it. Also I come from a large family so maybe to make the food spread out further.
  • I use whatever's handy... crackers, bread crumbs, bread soaked in milk, leftover rice or Quinoa. I also add finely chopped veggies if I have any; for example: onions, carrot, celery, zucchini, or peppers.

    If I'm tossing together a standard meatloaf, I always use panko. Otherwise, my absolute favourite meatloaf recipe is this one:

    DH loves it (and he claims that turkey isn't meant to be in ground up form!). Enjoy!:smile:

    Ooooo. These look good. I don't eat meat anymore but I live with The Carnivores so maybve I can try a little "health by stealth" on them! :tongue:

    Lol...love the "health by stealth". I made meatballs using mushrooms as my filler. Served them over Shirataki Tofu Spaghetti Noodles and spaghetti sauce. It was yummy.
