Cooking Help ASAP

HELP!!! I am down, recovering from surgery and can't cook. My fiance loves cooking, but tends to do things in a fattening way. I am looking for EASY low cal recipes that he can make. He is great in the kitchen, but lets be honest, most good for you foods involve a ton of ingredients and steps and he just doesn't have the time right now, having to care for me and our daughter. Any ideas would be appreciated. Thanks!

    one of our favorites is 2 cups cooked rice, 1 jar salsa and 1 can black beans, rinsed and drained. heat it all up together. we serve it on tortillas, my hubby likes it with shredded cheese and sour cream. it is also good with corn added in.

    I like chicken with some Mrs. Dash seasonings on them, brown rice, and a veggie (I am on a corn kick right now).

    Paprika chicken (sooooo tasty!!)
    2 chicken breasts cut in half (boneless and skinless)
    4 medium potatoes chopped into maybe 6 or 8 pieces each
    1 tin of crushed tomatoes mixed with
    1 tablespoon of smoked paprika
    100g feta cheese

    put the chicken and potatoes into a casserole dish (try to have them on one layer so quite a big dish) pour the tomatoes mixed with paprika over the top, crumble feta over the top then bake for about 45 minutes on 180 degrees Celsius (sorry don't know the Fahrenheit number!) when the time is up poke the potato with a fork to make sure it is soft and cut into a piece of chicken to see if it is cooked through.

    That's the results of a google search for recipes with 5 ingredients or less. There are about 10 pages of links. They are usually quick-fix meals...or at least throw in a crockpot and go type recipes.

    Edit: Oh, and on foodnetwork.com there is a chef who has a program called "5 Ingredient Fix". I watch her often and she has some killer looking recipes.

    just about anything you cook in the oven you can put into a crock pot.. Will save you a ton of time.

    Indoor grill pans are super cheap. We grill just about any meat and many veggies. It is fast and a lot healthier than frying.

    Other ideas: Parmesan and bread crumb crusted fish or chicken tenders (Mix cheese and bread crumbs in one dish and use a little skim milk in another. Dunk the fish/chicken in the milk and then the cheese/crumbs mix. Put on baking pan spray with cooking spray (Both the pan and the meat) and bake.

    I have also learned to make some of the things I have always made by using a leaner cut of meat (loin or chuck) or removing the skin and fat (chicken)

    This is probably one of my favorite recipes, easy and it takes 10 mins or less. My kids ask for it about every other day lol

    1 packet of Quakers instant grits-- original, butter, or cheese flavor works best (1 for each person)
    Kosher salt and freshly ground black pepper
    1/4 cup fresh parmesan cheese
    2 tablespoons unsalted butter
    1 1/4 pounds medium shrimp, peeled and deveined, tails intact (I use pre-cooked shrimp)
    2 large cloves garlic, minced
    Pinch of cayenne pepper (optional)
    Juice of 1/2 lemon, plus wedges for serving
    2 tablespoons roughly chopped fresh parsley

    Directions
    Follow cooking instructions on grits packet, but before you cook add a tablespoon of fresh parmesan

    Meanwhile, season the shrimp with salt and pepper. Melt the remaining 2 tablespoons butter in a large skillet over medium-high heat. Add the shrimp, garlic and cayenne, if using, and cook, tossing, until the shrimp are pink, 3 to 4 minutes. Remove from the heat and add 2 tablespoons water, the lemon juice and parsley; stir to coat the shrimp with the sauce and season with salt and pepper.

    Divide the grits among shallow bowls and top with the shrimp and sauce. Serve with lemon wedges.

    Birds Eye Voila!! is quick and easy and isn't loaded with fat and calories. It's also not too bad on sodium considering it's prepackaged food. You just have to shy away from the Teriyaki Chicken and the one that has Soy Sauce in it. There's also Steamfresh Chef's Favorites. They heat in the microwave for about 5 minutes, throw in a protein and have a great meal. Another favorite of mine is Van De Kamp's/Mrs. Paul Grilled Tilapia Parchment Bakes Only 70 calories per piece of fish. All your hubby has to do is preheat the oven, place it on a cookie sheet, and put it in the oven. Easy smeasy!!

    He can also go to Food Network's Website and look for Hungry Girl recipes.

    Chicken breasts with some flava as my friend Lindsay calls it (The new Hubby and I created it)

    Chicken breasts
    Lemon Peper seasoning (Mrs. Dash brand is no salk added)
    OR
    Mrs. Dash Spicy
    OR
    Mrs. Dash (Yellow lid)

    1) Sprinkle the Seasoning of choice on both sides of the chicken.
    2) Put it in a NOn-Stick skillet or frying pan on the oven (non stick means no oil or butter to grease your pan)
    3) Cook 1 side 10 min, flip, cook side for 10 min, flip, cook side for 10 min, flip, cook side for 10 min.
    4) MAKE SURE THEY ARE DONE (no salmonella!) and serve!

    We serve with a veggie and mashed potatoes usually....your choice!
