Any vegans? I would love to know your vegetable recipes!

I am not vegan but am curious of other ways to incorporate vegetables in my diet. I watched forks over knives documentary which does make me consider a vegan lifestyle .

    I think the easiest way is to throw a veggie or two into everything you already eat. Chop up some bell peppers and onions and toss it in with your rice; put some shredded carrots in your mac and cheese. Also, if you center your meal around the vegetable and treat the grains and protein as a "side" instead of the other way around, you'll fill up faster, get more vitamins and probably lose some weight since veggies are so low calorie.

    I love roasted vegetables and they're super easy. Drizzle any veggie you like (or want to learn to like - brussels sprouts are amazing this way!) with olive oil and sprinkle on a little garlic and black pepper and any other seasonings you like. Roast them in the oven for 20 minutes or so and voila! You can also put almost any veggie on the grill in foil with your cookout.

    I am far from vegan but I love my vegetables. This recipe is the greatest thing ever. I make these at least once a week.

    My favorite thing to do is just cut up a ton of vegetables and spread them out on a baking sheet. quick spritz of Pam olive oil and roast veggies for 45ish mins.

    Then. . . then toss them in tofu scramble, salads, wraps, sandwiches, puree them with a little broth for a soup, filling for quesadillas, toss it in pasta sauce, etc.
