Just got this from a friend. I made them and they are delicious!
Ingredients:
3 scoops vanilla whey (I use Dymatize ISO-100)
1.5 c Oatmeal (made into flour by blender)
4 T Ground Flaxseed

1/2 tsp. Baking Powder
1/2 tsp Baking Soda
Pinch of sea salt
1 whole egg
1 c. Unsweetened Almond Milk
1/2 c. Unsweetened Applesauce
1/4 c. Plain Greek Yogurt
1/2 c. Unsalted walnuts
Instructions:
Mix all dry ingredients, except walnuts, in a large bowl.
In a different bowl, mix all wet ingredients.
Add wet ingredients to dry ingredients. Mix well.
Add crushed walnuts to bowl.
Add mixture to a greased muffin pan (I use a silicon muffin pan - LOVE it!)
Bake at 350 for 20 minutes. Makes 12.
