    hey there

Here are some of my favorites:

Chicken salad with lettuce, tomato carrot cucumber breast meat of chicken or smoked, and sometimes I add some avo(1/4) and a few small bits of feta(1/4 wheel) Can also change it and use turkey or tuna

Pasta with tuna, and maybe some

Brown rice with some stirfried chicken and carrots and broccoli, i have mine without rice

    I really like:
Ground turkey mixed with my favorite salsa and fajita seasoning (sometimes I will add garlic and onion)
Boston lettuce (best lettuce for wrapping)

Pack separately then at lunch pop the ground turkey in microwave and make lettuce wraps.

It is so good and the crunchy lettuce gives me that taco feeling.

Swwet potato and red pepper soup!

Just cook off onion and garlic (i add a couple of carrots too)
Add the sweet potato and red pepper and veg stock.
Leave to cook for 1.5-2 hours
Season to taste with salt and pepper

I also like to add a little spice (curry or chilli powder)

    Soooo yummy :)

I dunno how you may feel about Baby Spinach, but here's what I eat for lunch:

    2cup baby spinach
6 slices of Oscar Meyer deli Turkey
1slice of Sargento Baby Swiss cheese
    135 cal; 4 g carbs; 15 g protein; 5.5 g fat.

I enjoy this and it tastes pretty good dry.

    Hope this helps!

(copied from the inexpensive meals thread)

My tomato plants are now starting to put out a decent about of fruit so I've made soup pretty cheap.

6-8 tomatoes from garden - free
    1/2 head of garlic - $0.25
1 ear of corn - $0.33 at farmers market
    1/4 to 1/3 of a small bag of baby carrots - $0.25 to $0.33
Nonstick spray for baking pan - ??? maybe $0.05
Black pepper to taste - ??? maybe $0.05

    Set oven to 400.
    Spray pan.
    Toss in veggies.
    Add pepper to taste.
    Spray veggies.
Bake or broil until soft. Getting some browning improves the taste.
    Remove from oven.
Cut corn off cob (this can be done before cooking as well). Make sure to scrape con with back of knife to remove everything.
    Blend until smooth.
    Serve hot or cold.

I like to top this with a pinch of a hard white cheese like parm or Asiago and a slice of toast or some pretzel thins. I usually get two meals out of this amount. This soup also saves me from throwing out any veggies that are starting to be past their prime. The last time I made this I added in about 3 cups of baby spinach that was on the fridge that I wasn't planning to eat.

I made another batch last night and substituted a head of cauliflower for the corn.
