Southwest Turkey Bake

Last weekend I bought a 3 in 1 cookbook that featured: 100 calorie snacks, 200 calorie desserts and 300 calorie main dishes. The other day I made Southwest Turkey Bake and yum yum. Figured I'd share it.

1 pound extra-lean ground turkey
1 can (about 15 ounces) back beans, rinsed and drained
1 cup salsa
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
1 package (81/2 ounces) corn muffing mix
3/4 cup reduced-sodium chicken broth
1 egg
3/4 cup (3 ounces) shredded reduced-fat Mexican cheese blend

1. Preheat oven to 400*F. Brown turkey in large nonstick skillet over medium-high heat until no longer pink, stirring to break up meat. Stir in beans, salsa, cumin and red pepper; simmer 2 minutes.
2. Spoon turkey mixture into 13x9 in baking dish.
3. Combine corn muffin mix, broth and egg in medium bowl; mix well. Spread over turkey mixture. Sprinkle evenly with cheese..
4. Bake 15 minutes or until edges are lightly browned.

Makes 8 Servings

Calories 267, calories from fat 24%, total fat 7g, saturated fat 2g, cholesterol 61mg, sodium 640mg, carbohydrate 29g, fiber 5g, protein 21g.

I tweaked the recipe because there were some ingredients that I don't like. If you tweak it, I would recommend adding the recipes to your food diary and it will calculate the new calories etc.
