Suggestions for healthy meals for NON-cook?

Hello all, I'm struggling to find healthy and easy meal ideas that don't involve a lot of cooking and preparation (other than a salad, which is getting old). I honestly HATE preparing and cooking food for only myself, and especially in summer! It seems like everything is family sized in the markets and I feel like I waste so much food!
It's at the point where my favorite lunch is carrots wrapped in bits of low fat string cheese with freshly ground pepper (actually VERY yummy and filling). I do like to eat fruits and veggies, try new things. I'm actually not a huge meat eater, and I try to eat minimal dairy.
Help! Can anyone make some suggestions? ideas/recipes/advice/websites/etc? I need all the help I can get!
Thanks!!

I just steam most of my food. I'll steam the majority of it for the week one day like my salmon and veggies and maybe throw a batch of chicken in the crockpot with broth or salsa to cook. I rarely actually cook. My favorite meal is heating spaghetti squah in the microwave and then throwing steamed broccoli and some chicken in the mix with the squash. I toss it on a heated skillet for a minute or two with liquid aminos (soy sauce substitute) and top with nutritional yeast. It makes a huge serving of a cheesy pasta type meal and only takes a minute or two to prepare if I have all my food steamed and made ahead of time.

Theres cooking....but not much at all and if you knock it out in an hour your not busy at the beggining of the week then you won't have to worry about it the rest of the week.

When I first saw the topic I was going to suggest a chicken salad (you can use canned chicken or leftover shredded chicken from a previous dinner or rotisserie meal).

THEN I saw that you aren't a big fan of meat (same here!) so I would suggest doing a chickpea salad. You drain and rinse a can of chickpeas and mash them up and then use them instead of chicken or tuna in the salad. So add mayo (the only high calorie thing in the meal, how much you use is up to you), diced celery, halved grapes, walnuts or pecans if you want, etc.

Chill and eat alone or on a pita, tortilla, slice of bread, crackers, or in a lettuce leaf.

Nice and refreshing for these HOT days we're having! :flowerforyou:
