I would suggest staying away from the noodles, rice and fried foods. Stick to veggies, fish, and chicken without too much sauce. Eat slowly. Stay away from desserts- eat fruit instead. Not as much fun as eating everything you love but you'll love yourself more when you weigh yourself next time and see you didn't gain any weight. Chinese buffet is a really tough one, but you can do it. Let us know how you did. And happy birthday to your Grandma!!

Do they have a "Cook to order" station like a Mongolian Grill? A Sautee station?

If they do, opt for that. Grab plenty of vegetables, the proteins, and let them know how you want it prepared...

I would recommend staying away from anything swimming in sauce as that generally means high sodium and/or MSG, oils, unhealthy fats.

Avoid breaded "chicken"... usually its the dark meat that they use (cheap).

Usually a common dish served in a Chinese Buffet would be a steak-pepper onion seasoned with salt, pepper, garlic in an extremely light sauce... thats a good one.

Anything Moo-Goo-Gai Pan is steamed but they might use a little oil to retain some moisture... be sure that it is fresh made.

Chicken/Broccoli varies from place to place...

Soups... Wonton is decent if you have 4 or 5 (they are pork-filled with scallion), the broth is not too bad but have a pitcher of water at the table.

Do they have a salad bar?

I would say go easy and have what you want!
Then the next day you pick up where you left off! and get back to eating healthy etc!

Go out and enjoy it dont over eat but eat what you want

    This^^^

One day of eating what you want isn't going to affect your progress enough to worry about. All things in moderation.
