I need good egg recipes

I love eggs but I am gettin bored of the boiled, scrambled and fried.. I need good interesting egg recipes that I can have for lunch.

    omelette? You can put loads of different foods in them.

    if you like spice try a masala omelette (or you can make them scrambled from the same mix)
    finely sliced onions mixed with green chillis and finely chopped coriander (cilantro) and chopped fresh tomato seeds removed. add a pinch each of turmeric, ground cumin and coriander and chilli powder. Whisk in our eggs and fry in omelette pan - you can finish off under the grill. My husband always adds a bit of water to the mix - makes it a bit spongy so holds its shape. Ideally you'd eat this with a fried indian bread - paratha but because it's so flavourful I survive with unbuttered brown toast.,,,

    I make veggie frittata that I find very satisfying. It serves 2, so I usually make it one day, and eat the leftovers warmed up in the microwave the next day.

    In a 10" skillet, heat up 1 T olive oil over med high heat. Add 1/4 cup chopped onion and cook until tender. Add 1/4 cup diced red or green peppers, 1/2 cup matchstix carrots or broccoli slaw mix, and a small zucchini shredded on a box grater. Cook about 5 minutes more, until the veggies are cooked. Turn on the broiler. In a bowl, scramble 2 whole eggs and 3 egg whites. Pour into veggies. Add 1 oz of your favorite cheese sprinkled on top. (My favorites are feta, goat cheese, or pepperjack). Let the bottom cook a minute on medium heat then wrap the handle with foil and place under the broiler for a minute to cook the top of the eggs and melt the cheese.

    Someone posted this recipe using 5 eggs in a recent quinoa thread. I haven't tried it but it's on my agenda.
