Increasing the amount of polyunsaturated fat in the diet has been shown to lower cholesterol levels by lowering the LDL cholesterol without reducing the HDL. The preferred type of fat to substitute for saturated fat is monounsaturated fat. Monounsaturated fat, like polyunsaturated fat, lowers total cholesterol levels in the blood. However, this reduction in total cholesterol is the result of lowering LDLs, while the beneficial HDL levels may even be increased.
