Squash recipes?

Anybody out there have any good recipes with squash in them? The organic farming place next door just gave us a bunch and I'm not sure what I should make with them! Thanks! :)

    Try sauteing them with onion in olive oil. Or look at the new recipes just posted recently, there's one with zucchini that you use to make imitation pasta. Yummy, I'm trying that one with squash and zucchini too.

    Sugar-Free Pumpkin/Squash Cheesecake Spread

    Ingredients:

    1 cup cooked pumpkin (mashed) -- you can substitute another squash if you want. Just don't use canned pumpkin.
    1 package cream cheese -- I used regular full fat
    1 tsp cinnamon
    1 tsp vanilla extract
    1/4 - 1/2 tsp nutmeg
    6 - 8 drops liquid stevia

    Place ingredients into a medium bowl and mix with hand mixer until creamy and well-blended.

    Serve with high-fiber crackers (think Wasa)

    Nutrition:

    Serving Size = 1 TBSP | Recipe Makes Approximately 30 Servings

    Calories: 26
    Carbohydrate: 1 gram
    Fat: 2 grams
    Protein: 1 gram
    Fiber: 0 grams
    Sugar: 0 grams

    I'm obsessed with pumpkin at the moment. For a week I've eaten it in some way every day. It helps keep my sweet cravings in check. :)
