Warm Spinach Salad

This is what we ate tonight. It's an adaption of something I ate at Perry's Steakhouse. Their's was made with large shrimp, which would give you a meal with much less sodium than this.

Ingredients:

4 links Open Nature Sun Dried Tomato and Basil Chicken Sausage
8 oz baby bella mushrooms, sliced
2 Tbsp butter
10 oz fresh baby spinach
2 oz blue cheese, I used Castello Rosenborg
1 bunch fresh cilantro, chopped

Method:

Brown the sausage in the butter, add the mushrooms and toss. Cover and simmer until the mushrooms are done. Add the cilantro, then the spinach. Cooked covered until the spinach is wilted. Foss ingredients together then add cheese.

This was actually a little salty for my taste, but still very good.
