Need ideas-what to pack in ice chest for road trip snacks

Options
Obviously baby carrots are a no brainer. What else travels well when the ice has melted and it's just bobbing around in cold water in it own little zip lock baggie?

    Maybe you can juice some of the fruits and vegetables, and jar it and it will keep...snacks that don't need to be in water is great too if you just bag them. Even healthy crackers, coconut water ect...

    I wonder what people consider to be "healthy crackers". I've seen that term before, but don't know what they are.
