I'm going to my sister's house tomorrow for dinner, and she's been asking me for years now to make her brownie pudding cake. Truth is though... I don't want to make it if I can't enjoy a nice slice of it!
Do any of you know of a recipe that uses brownie mix and is calorie friendly?
I would rather not go over 300 a serving.

now i have one but i wasnt didnt love it.... and it was more of a low fat recipe.... you use a box of brownie mix and substitue the liquid ingredients with a 15 oz can of pumpkin filling.... so no eggs, water or oil...

the reason why i didnt like them was because of the texture... it was not fall apart yumminess... lol... i have been wanting to try and make them again with a small can and adding 1 egg and half the oil... for a lower fat option

hope this helps... let me know if you try it

I was just going to suggest pumpkin puree, but not the pie filling, in lieu of the oil. Then I made the pumpkin cream cheese topping and they were pretty darned good. I hope it's okay that I posted the link to the recipe.

  • Right now, I have a tray of zucchini brownies in the oven! I didn't have pumpkin puree, so I found a great recipe online for zucchini brownies. :)

could you post the zucchini brownie recipe...and nutrition information if you have it. I am a brownie freak. Love them!

I did try the pop in the mix last week for a Mississippi Mud Betty Crocker Supreme dessert and it worked...kind of messy though an not sure if because of marshmallows or what? Could try that...but bake longer
  • They are FANTASTIC!!!!!!
    I used
    -2 bags brownie mix
    -1/4 c water
-1 egg (or the equivalent in egg beaters)
    -1 medium zucchini
Grate zucchini. Add egg and water to zucchini. Mix well. Add in brownie mix. Bake at 350 for 30 minutes.
This works because the zucchini adds a crazy amount of moisture to the batter, rendering oil unnecessary. When I made them, I used a little much zucchini, so that's why I used two bags of mix instead of one.
The thicker the batter is, the better because the zucchini will sweat out moisture as they bake.
If you're feeling extra indulgent like me, chocolate syrup is really great drizzled on top after they are out of the oven!
Maybe next time, I'll add nuts or chocolate chips.... :)
Mine came out to be around 200 calories a brownie.
    Enjoy!
