Recipe: Warm Steak Salad with Grilled Romaine
Hey everyone...thought I would share my dinner last night...it was delicious.
Serves 2...500 calories each salad
1 - 8oz. NY Strip steak, trimmed and seasoned
1 large heart of Romaine lettuce, slice in half lengthwise with core in tact so leaves stay together
2 ears of fresh sweet corn, corn cut off the cobs
10 cherry or grape tomatoes, halved or quartered
2 tbsp pickled jalapenos, chopped
1 tsp extra virgin olive oil
2 tbsp bbq sauce
Grill NY strip to medium or your preferred temperature and set aside to rest. Grill each Romaine lettuce heart half until slightly charred and wilted.
In a saute pan, add 1 tsp. of olive oil. Add the corn and saute for 2-3 minutes. Add in the jalapeno and tomatoes. Saute for one more minute to heat the tomatoes through. Add salt and pepper to taste.
Lay each grilled Romain half down on two plates. Evenly divide the corn saute over each heart. Slice and lay 4oz. of steak over each. Drizzle with 1 tbsp bbq per salad.
This was a super easy and quick weeknight dinner. It was nice to get away from the standard salad. It is spicy, sweet, and smoky all at the same time. DH loved it. There was a lot of corn, maybe next time I would only use 1 ear.
