Hey all!
I'm heading to a local farmer's market after work today, and I was wondering if anyone had any good recipes for some fresh veggies/fruits that are in season now. Fresh produce = yummmmm

This is one of my favorite recipes...the picture does not do it justice! I usually serve it with brown rice. It's just a few ingredients and only takes about 30 min to make.

Spaghetti Squash “Anti”- Pasta Salad
Ingredients:
1 spaghetti squash 1 can- Artichoke hearts, quartered
1 cucumber, quartered ¼ - ½ cup Celery, chopped
¼ - ½ cup Baby carrots, chopped ¼ cup Black olives, sliced
¼ - ½ cup Bell peppers, red, green or yellow (or all) Feta cheese, crumbled
¼ - ½ cup Broccoli florets; cut into fairly small pieces grape or diced tomatoes
¼ - ½ cup Cauliflower florets; cut into fairly small pieces 1 jar- Lite Italian dressing
Directions:
1. Cut spaghetti squash in half, remove seeds and pierce multi times with the knife.
2. Place squash in a microwave safe dish flesh side down and cook in microwave for 15 minutes. Once cooked remove from microwave and allow to cool so you can handle easily.
3. In the meantime chop your vegetables. Vegetable choices can be customized to your personal taste; add and subtract any vegetables you choose. Amounts needed may vary depending on the size of your squash; adjust as needed.
4. Scrape the spaghetti squash into a medium-large size bowl; discarding the skin. Fluff with a fork to loosen the strands of squash.
5. Add your prepared vegetables, feta cheese; stir mixing well. Add about half of your Italian dressing and continue to stir. Continue to add dressing as needed (to taste).
*I prefer Newman’s Own Lite Italian Romano; however, you what you can get or like.
6. Chill and serve. (best of left to marinate overnight)
***tailor to fit your needs and likes. The measurements are not exact because I just made this recipe up and my co-workers LOVED it and wanted the recipe so I just typed something up.

See if they have squash blossoms!
Preparation: You basically rinse and dry them (gently), then make a batter of flour, an egg, salt, pepper, garlic powder and enough water to make it into a thick batter consistency. Then fry them in 1/4 inch of olive oil until golden brown and drain on paper towels. You can sprinkle a little parmesan over them too if you'd like.
Obviously this is a treat snack, I wouldn't suggest eating these all the time, but if you can find some blossoms, they are delicious this way! Bon Appetit!0
