What sugar substitute do you use in baking?
We love banana bread/muffins and I just can't find a low calorie/low fat recipe that has much taste. I have been using truvia instead of sugar and I am beginning to think that might be the problem--seems to have an odd aftertaste. Just wondering what the rest of you use instead of sugar in your baking recipes? Thanks!!

I use Stevia In The Raw.
Also, using applesauce in place of oil in muffins works great.0 -

I have a wheat free Banana mufin recipe that i make and I figured out that ionstead of a whole cup of sugar (which the recipe calls for) I use 1/4 cup and I grate one or two apples into the mixture.0 -

I like to use Splenda. They have Splenda they have a brown sugar mix, and i think a baking mix. Dependng what i am making i usually use the regular splend and just use less.0

I've tried a couple of sugar substitutes for baking - and they just didn't taste good. So, I"m back to using regular sugar and watching how much I eat - which seems like a better long term strategy for me.
Now I try not to bake too much, but when I do I use recipes that have fruit for natural sweetness and cut down the amount of the sugar in the recipe. I also pay attention to how many serves I'm getting out of the recipe so that each serving isn't too high in cals.0 -

I hate using artificial sweeteners for baking, so I just stick to sugar and use less of it or make smaller muffins/cookies/etc.0

I'd love to know too! Stevia I find to have an after taste I can't live with. Splenda, I have no problem in cold items like cottage cheese, home made yogurts etc. But in hot dessert it tasted funny, better without it!0
