In an effort to cut out processed food, a few months ago I tried to make mayonnaise using olive oil but it was absolutely disgusting--very oily tasting. But I hear people say they make their own mayonnaise all of the time and since I eat a lot of tuna and egg salad it would be worth the effort to make my own.
Does anyone have a mayonnaise recipe they use personally?

The original recipe is good, but here is mine:
Quick, Delicious Mayonnaise
Recipe By : The Joy of Cooking // Serving Size : 1
Preparation Time : 15:00 // Categories : Condiments
Amount Measure Ingredient — Preparation Method
* 1 high quality egg
* 1 teaspoon dry mustard
* 1 teaspoon kosher salt
* dash cayenne pepper
* 1 teaspoon sugar
* 1/4 cup oil
* 2 tablespoons lemon juice
* 1 tablespoon apple cider vinegar
* 1/2 cup oil
* 1/2 cup oil (at this point, if I am using a spiced oil, I will use a very bland oil here)
1. Put in the food processor: egg, mustard, salt, cayenne, sugar and oil. Cover and blend on high until thouroughly combined.
2. With processor still running, slowly add 1/2 cup oil, and then the lemon juice and vinegar until thouroughly blended.
3. Very slowly, add the remaining oil and blend until thick. You may have to stop and start the blender to stir down the mayonnaise. If mayo appears too runny, you may add a little more vinegar to try to curdle it up.
Yields 1 3/4 cup.0 -
Thanks for the recipe, kayemme! What kind of oil do you use... I'm guessing not olive oil? I think that's why the first time I made it my mayonnaise tasted so bad.
Part of the reason I want to make my own mayonnaise is to keep the polyunsaturated /vegetable oils to the bare minimum because of the high levels of omega-6 fatty acids. So if anyone else shares those concerns and has a recipe that maybe combines the olive oil with something else so it doesn't taste so bad I'd love to hear those too--olive oil is so expensive I hate throwing cups and cups of it away experimenting.0 -
here is one recipe
1 part milk
3 parts oil ( if olive oil is used please use extra light)
salt to taste.
in a tall glass put milk and oil toghether and with the hand blender, blend it untill it becomes like a paste.
another one.:
1 hard boiled egg yolk
1 raw egg yolk (optional)
oil any kind.
in a small boul crumble the egg yolk and using the mixer on the lowest speed add small ammounts of oil. every once in a while add just a spoon tip of cold water. make only as much as u need.0 -

you can use any oil; i actually do use olive but i like the taste of it. if i'm using a leftover spiced oil (like from the antipasto bar, you know how those things are all coated in oil? well, i don't throw it out. i save it for making mayo) then i cut the spiced oil with olive. if you prefer something lighter, maybe safflower would work nicely, or sunflower.
edit: also, i've been doing it for a while, so i feel like i've got kind of a handle on how much oil it needs which isn't always exactly what the recipe calls for. so on that last quarter cup, i just kind of watch the sauce and see how it looks. i usually skimp a bit when using olive because it's so rich.
one thing about my homemade mayo is that because it's so rich, i use considerably less. a jar (i think it's about a cup and a half) will last me and my boyfriend several weeks.0 -
i've also heard of making "mayo" out of potatoes. you'd have to do a search for it, but i thought this would be an interesting thing to try. i'm on a "no bread" thing right now, so we haven't had mayo around for a couple months, but maybe this fall when i go back to bread baking, i'll try the potato version.0

Have you considered using greek yogurt instead of mayo as a sandwich spread and salad ingredient? It can be made to taste like almost any creamy dressing or sauce with the right spices!0

I've made it before. It was a Gordan Ramsey recipe.

I bought a bottle of "extra light tasting" olive oil to try out kayemme's recipe with so I'm hoping it turns out better than the last time I tried to make a mayonnaise.
