Dark Chocolate Fudge Pop

My recipe was inspired by http://everydaypaleo.com/2011/02/15/chocolate-custard/
Since my custard never set up right. I decided to freeze them! ;o) They turned out pretty delicious.

This is what I did:
1 can Taste of Thai Lite Coconut milk (Or you can use whole fat if you wish. Just recalculate the values)
1 cup dark chocolate chips
2-3 Tablespoons Stevia in the Raw (to taste)
1 teaspoon cinnamon (optional but actually tastes very good!)
A dash of salt
A splash of vanilla

Pour chocolate chips in a mixing bowl. Warm the coconut milk in a small pan just until it is about to boil. Pour the warmed coconut milk over the chips. After about a minute whisk to mix then add the vanilla, cinnamon and stevia continuing to whisk until well blended. Pour into popsicle molds and freeze. I did them overnight so I knew they'd be good and frozen.

As written they are a little high in calories, carbs, and sugar so I will be definitely changing to the Sunspire chips. Great treat for a summer day when you have the room for some additional calories.

Nutritional values as written for 8 fudgesicles:
175 calories, 20 carbs, 12 fat, 1 protein, 17 sugar, 2 fiber

If you use the Sunspire - Organic 65% Cacao Dark Chocolate Bittersweet Chips:
109 calories, 10 carbs, 8 fat, 2 protein, 6 sugar, 2 fiber
